Chocolate Wonderland

I know. I know. We are not even to Thanksgiving yet but this visit was for a good cause. To take some of the most amazing people I have been blessed to meet (my Boyfriends Parents) to Chocolate Wonderland! What is a better cause then chocolate Cupcakes?

If you ever visit lovely Las Vegas there is so much more then just neon lights and slot machines. One of those happens to be Ethel M Chocolate Factory. You can visit and watch the chocolate made, learn the history of chocolate, sample the chocolate and then visit their three acre cactus garden. It is lovely. Just around Christmas time they decorate with amazing lights that sparkle for miles. It is Chocolate Wonderland.

Retro Cupcakes featured on Baking is Hot!

One of my favorite blogs Bakingishot  featured my Retro Thanksgiving Cupcake last night. I have been going to this amazing blog forever to drool over the amazing food and photography from all the amazing food blogger and bakers in the world. Sweet Sixteen Cake Pops.

What does a girl love more on her sixteenth birthday then anything? Well presents of course. Followed closely by sweets! I wish I had a shirt that said I <3 chocolate /cupcakes /cake pops /candy.
Back on topic though: Have you ever had one of those relationships most people around you don't understand but to you and that person makes perfect since? My best friend is named Javier and he is little older then me and born and raised in Southern California. On outside appearances alone (me being a little hick girl from the heart of Texas) you wouldn't think we had much in common. I can't think of anyone I have more in common with. He has been my strength, companion, mentor, psychologist, football Buddie, life strategist and so much more. So when his beautiful daughter (whom I consider to be my adopted niece and would do anything for) asked me to make cake pops for her best friends sweet sixteen birthday party I couldn't wait to get started. I love anything I get to do that is girlie and starts with the word sweet. This is what I came up with to help celebrate one of the most important birthdays in a young girls life.


First we are going to melt our candy melt and make some bow
molds. You can dye the candy with food coloring gel
(never water based)
for any color bow you want. I used the Wilton candy
brights melts so
when I change the color it still looks like it has sprinkles in it.


After you bake what ever flavor you wish crumble it up in a bowl and prepare to bring on the sweetness.



Added about 1/2 of the frosting to the cake mix and started stirring until it is all mixed.
Cake Pops calls for about a third of a regular can of frosting
 but I have
found the way I make them a little more frosting works best for me. The most important thing
is what I call "mashing" the mix. Make sure every inch is coated in frosting and "mashed" together
so they form easy for you and stick together on the lolly pop stick.


I use a small ice cream scoop to form the initial balls before rolling them out in my hand.
Pack it real tight with mix and you will have lovely round cake balls.


After cooling cake balls/dipping and adding lolly pop sticks we can
now decorate our cake pops how ever we see fit.
I formed mine into
little squares by hand and then dipped them in green Wilton candy melts. Then I added
sparkles, bows and piping.

It's a Retro Thanksgiving Cupcakes!

Thanksgiving always makes me long for home. My world growing up was decorated with laughter and deliciousness.  On Thanksgiving no matter how poor we were or what life was throwing our way my house was overflowing in the smell of home cooked food and sweet honey and sugar. The cooking began three days before and continued all day into Thanksgiving. On Sunday I get to meet my Boyfriends Parents for the first time and I am super exited about that. My Hero Ryan was born in 1978 and I was born 1979. He talks often about his Parents and how much he loved growing up in Yankee Michigan. I often wonder what my parents Thanksgivings were like when they were kids. I would give anything to be able to see my Parents for just one day when they were children. To see them laugh without the worry of bills. To see them smile with out the cares of world on their shoulders. That got me inspired. Instead of the traditional I would go RETRO! Since almost everyone will have a pumpkin something of some kind already (and thank goodness they will I adore pumpkin everything) I decided to make carrot cake cupcakes and paint them orange. Not the traditional orange but he orange of the couches I see in all my parents photos when they were children. These are for great Parents and amazing Holidays.

Inspired Ideas for everyone’s favorite treat .

Turn to page 25 and we are going to use her carrot cupcake recipe as our base. (Because really who does it better then Martha?)


Instructions:
1 pound carrots, peeled and finely grated
2 large eggs, room temperature
1/3 cup buttermilk
2 cup sugar
11/2 cups vegetable oil
1 vanilla bean, halved length wise, seeds scraped and reserved
(or 11/2 teaspoons pure vanilla extract)
½ cup golden raisins
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground cloves
Cream Cheese Frosting

1.     Preheat oven to 325deg. Line standard muffin tins with paper liners.
Whisk together carrots, eggs, buttermilk, sugar, oil, vanilla-bean seeds, and raisins.
In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves. Stir flour mixture into carrot mixture until well combined.
2.     Divide batter evenly among lined cups, filling each three-quarter full. Bake,
Rotating tins halfway through, until a cake tester inserted in centers comes out clean, 23 to 28 minutes. Remove and let cool on cooling rack 10 minutes.

(My side notes: I am a cook book junkie as you know and here are the alterations I used for this recipe: I used the vanilla extract because really vanilla bean halving is for people who don’t work full time for a living and raise a disable daughter). I skipped the raisins because there are many people who don’t like raisins (I love them as a side note) and added dried cranberries instead. I also sipped the cloves because I am just really not a clove fan. Everything else was spot on.





First we make our cream cheese vanilla frosting and break out the orange gel dye!

Working Woman Heroine Cake Pops.

One of my really good friends and co-workers asked me to make him some cake pops for his new bride and some of her friends after she tried one of my cake pops and really like it. I was more then happy to do this and make them extra special because seeing how happy he is after all these years makes me happy. His path to a good woman has been long and much harder then a good man like him deserved but now he has found a sweet, honest and loving woman who just happens to be beautiful to boot. I have not been blessed with the chance to get to know her really well yet but I know she is a hard working woman helping my friend raise his two cute-as-a-button little girls. She wears a uniform like me everyday to work (not exactly like mine but not satin and lace either) and that is what inspired me when I sat down to start creating a special batch of Working Woman Heroine Cake Pops.



First I painted my chocolate bows and buttons using candy molds I purchased at CandyMoldCentral.
 



I melted the candy melts and removed my cake pops I made the night
before using Bakerella's basic cake pop recipe like always. I made milk-chocolate cake
with a dash of vanilla flavoring in the cream cheese frosting mix.




I used the basic cake pop construction found in Cake Pops by Bakerella and
some recipe flavoring tips found in Martha Stewarts175 Cupcakes. If you
don't have these books I suggest you go get them. They are such a treasure
of ideas and inspirations.
I rolled all the cake pops in honey Graham crumbs after dipping them in
white chocolate.
