Now Cupcakes...Who is read for some pumpkin pie served up cute and mini style?
PUMPKIN PIE MINIS
What we will need for this experiment in yummy:
2 ready made pie crusts (If you are one of the awesome make your own pie dough types you rock)
1 large can of pumpkin pie mix (or your home made pumpkin pie brew)
Cookie cutter of choice
Lolly Pop sticks (optional)
Melted chocolate (optional and baker's choice of flavor)

Step 1:
Grab some flour and measuring cups. Dust the area you will be baking on with a light coat of flour . |
Step 2:
Roll out your pie dough to prepare for cutting shapes. Get it nice and flat but don't make it too thin because it will need to be strong enough to hold your pie filling. |
Step 4:
Roll out your second pie dough and cut out shapes. This time I used a pumpkin cookie cutter for an extra touch of cuteness. |

Follow the instructions for your pie filling (usually 425 degrees for most pumpkin pies) but cut the time cooked by a third. The first batch you make I would check every eight minutes or so to make sure you don't overcook. Every oven/altitude bakes different. Once they are golden brown pull them from the oven and let cool for five minutes. Drizzle with melted chocolate if you desire and then let little hands grab big bites of Holiday scrumptiousness.
